Delicious GF Meatloaf Without Onions

This meatloaf recipe is a family favorite! Made with oats, yogurt, and unsweetened ketchup, it is moist and incredibly delicious. This is the perfect thing to throw together all in one bowl when you have plenty of ground beef, but you don’t know what to cook. It is easy enough for a weeknight dinner and impressive enough when you have friends or family over on the weekends.

I know there are a million other meatloaf recipes out there, but I wanted to share this one because it is the best meatloaf I have had! When I used to make the traditional meatloaf full of onions, my kids would be so unhappy trying to pick them all out and complaining all the while. So, I came up with this recipe made without onions, and everyone was happy at the dinner table.

How to Substitute Ingredients

Ground Beef – I usually use 85% lean ground beef and that is what the recipe was tested with. You can play around with different fat percentages, but it will likely be more dry if you go much leaner.

Yogurt – this meatloaf turns out great with buttermilk or cashew milk (for a dairy free version). Regular whole milk will work too.

Oats – substitute with your favorite bread crumbs.

Unsweetened Ketchup – I really love using unsweetened ketchup to control the amount of sugar my family is getting. But, regular sweetened ketchup works too!

Garlic – leave out if you don’t like garlic or if you are sensitive to it.

Equipment

  • 1 large mixing bowl
  • 1 large sheet pan

Ingredients
  

  • 3 lbs Ground Beef
  • 3 Large Eggs
  • 170 g Plain Yogurt
  • 75 g Rolled Oats pulsed in food processor
  • 48 g Unsweetened Ketchup 3 tbsp
  • 15 g Worcestershire Sauce 1 tbsp
  • 15 g Salt 3 tsp
  • 3 Garlic Cloves minced

Ketchup Glaze

  • 144 g Unsweetened Ketchup 3/4 cup
  • 23 g Worcestershire Sauce 1 1/2 tbsp
  • 23 g Maple Sugar or Brown Sugar 1 1/2 tbsp

Instructions
 

  • Preheat your oven to 350โ„‰ and line a large baking sheet with aluminum foil and parchment paper.
  • Add all meatloaf ingredients to a large mixing bowl. Use your hands to fully combine without over mixing.
    3 lbs Ground Beef, 3 Large Eggs, 170 g Plain Yogurt, 75 g Rolled Oats, 48 g Unsweetened Ketchup, 15 g Worcestershire Sauce, 15 g Salt, 3 Garlic Cloves
  • Place the meatloaf onto the lined baking sheet and form it into a loaf. Then brush the top with the ketchup glaze.
  • Put the meatloaf in the oven and bake for 1 hour and 10 minutes or until the internal temperature reaches 160โ„‰.

Ketchup Glaze

  • Add all of the ingredients to a small bowl or measuring cup and whisk to combine.
    144 g Unsweetened Ketchup, 23 g Worcestershire Sauce, 23 g Maple Sugar or Brown Sugar
