Easy Gluten-Free Meatballs

I make these meatballs weekly because they are just so easy and absolutely delicious. You just add all of the ingredients to a large mixing bowl, combine, shape, and bake! There’s practically no mess to deal with and everyone loves them.

Serve these with a simple marinara sauce on top of your favorite pasta. Or get creative and have them with rice or simply with a slice of crusty gluten-free sourdough bread.

If you want to make grain-free meatballs – replace the oats with almond flour and enjoy them with a slice of grain-free sourdough bread.

Easy Gluten-Free Meatballs

These delicious meatballs are made with gluten-free oats that are pulsed in a food processor instead of breadcrumbs. They are tender, flavorful, and super easy to make. The addition of homemade yogurt gives a slight tanginess as well as added moisture.

Equipment

  • 1 cookie scoop optional

Ingredients
  

  • 2 lbs ground beef
  • 50 g rolled oats pulsed in food processor
  • 113 g plain yogurt
  • 2 large eggs
  • 2 cloves garlic minced
  • 10 g salt 2 tsp
  • 1 g black pepper 1/4 tsp

Instructions
 

  • Preheat your oven to 450℉ and line a large baking sheet with parchment paper. Set aside.
  • Add all of the ingredients to a large mixing bowl. Use your hands to fully combine.
    2 lbs ground beef, 50 g rolled oats, 113 g plain yogurt, 2 large eggs, 2 cloves garlic, 10 g salt, 1 g black pepper
  • Use a 1.7 Tbsp cookie scoop to form the meatballs and roll them between your hands before placing them on the prepared baking sheet.

  • Bake for 15 minutes. Top with your favorite sauce and enjoy!

Notes

  • The yogurt can be substituted with buttermilk, whole milk, or homemade cashew milk.
  • Substitute the oats with almond flour for a grain-free option.
