- 2 large eggs
- 100g applesauce unsweetened
- 120g pumpkin puree unsweetened, only pumpkin
- 1/4 tsp ground ginger optional
- 267g oat flour
Preheat your oven to 350 degrees F.
To a medium sized mixing bowl, add eggs, applesauce, pumpkin puree, and ginger. Whisk to combine.
Add the oat flour and stir to combine until no dry flour remains.
Use a small cookie scoop to scoop dough balls and place on a parchment lined cookie sheet.
Wet your hands with a little water and then gently press down on each treat to flatten a little.
Bake for 16 minutes and let cool completely on a wire rack. Store in the refrigerator for up to 1 week or freeze for several months.
- If you don't want to buy store bought oat flour, you can make your own by processing old fashioned oats in a food processor. Just pulse until it turns into a flour.
